50 reasons to be healthy/ lose weight/ exercise

So one of my friends recently posted a blog about her 52 reasons she wants to lose weight. She said she figured if she had 50 reasons then it would be easier for her to find the motivation to stick with her plan every day. For me, I need to know others are there with me supporting me. So I started a group called "Jiggles to Jazzy with Jessalyn" on Facebook and I just started a competition with the women/ girls (I prefer being a girl, I am still grasping the fact that I am a woman) in my family. This post is mostly for them. One of the challenges this week is to write a list of at least 50 reasons why you want to do this challenge, lose weight and/ or be healthy.
The following is my list is why I want to do this. Some are great reasons of health, others are more frivolous.

1. I am sick of being sick, tired, and overweight.
2. I want a doctor to tell me something other than "lose weight" when I go in for an issue I'm having.
3. I was 150lbs once and I loved my size! (but the reason I was that size is because I was sick) I want to be there again, but I want to be healthy and strong.
4. I want to prove to myself I can do this.
5. If I can do this, It will be more proof to me that I can do anything I set my mind to.
6. I don't want to die early. (actually I would love to live past 100 so being healthy now would be a good idea :)
7. I want to be able to finish the workout classes I go to without having to stop in the middle.
8. I want to go to exercise classes and not be exhausted all day afterwards.
9. I want to have the energy to do more at my work.
10. The doctor told me that if I lost weight it'd be easier to have a baby, and I want to have a baby. :)
11. I want to be able to fit into my old clothes and some new ones.
12. I want to fit into more clothes in general
13. I want to stop feeling fat when I go to buy clothes in the size I used to wear and have to go up a couple sizes.
14. I would like to fit into my wedding dress again :)
15. I want my husband to be able to pick me up easier.
16. I want to be able to go hiking and not be in the back slowing everyone down.
17. I want to look in the mirror and not suck in my stomach wondering what I'll look like if I were smaller.
18. I want to show me how great I am.
19. I want to be an example to my kids. I can't expect them to do something I am not doing. (honestly I was listening to Merrilee Boyack's talk on CD "Teaching your children to fly" She talked about how her kids start on an exercise plan when they are 10 and I thought I want my kids to do this, then realized I need to know how to teach them that. so that is actually why I started the competition)

20. I want to look in the mirror and see the same person I see in my mind. :)
21. I want to be able to run a half marathon. not just set the goal but actually accomplish it.
22. I would like to run a marathon at least once in my life.
23. I want to feel more "sexy" for my hubby (He already says I am, but maybe you know what I mean)
24. I have this really cute pair of capris in my closet and I'd like to fit into them.
25. I'd like to be able to fit into the clothes in the closet instead of thinking, someday I will wear those again.
26. I want to have the energy to serve others and the Lord more fully.
27. I sleep better when I exercise and eat right.
28. I started eating healthier and I have had heartburn way less than I used to.
29. I secretly would love to be a fitness leader/trainer/coach (not so secret anymore)
30. I like the feeling of accomplishment when I have exercised instead of playing computer games all day :)
31. I like how I feel about myself when I eat foods that are good for me and I avoid the not so healthy ones :)
32. I'd like to not have people asking me if I'm pregnant
33. I want to run races (5k, 10k, half marathon, marathon)
34. I want to feel like I am in shape to run a relay race with friends and family (specifically the Ragnar relay)
35. I want to compete in the Ironman 70.3 in 2016 (thanks Shayla for the inspiration) and my brother already said he wanted to train for it as well.
36. I want to prove to myself that I can do hard things
37. I want to prove to myself and others that I can finish what I start.
38. I am sick of just talking about ideas for losing weight, I want to DO something about it.
39. I want to feel like doing more than sleeping all day. :)
40. I feel like my life is in a circle going no where, it's time to change that, starting with this.
41. I hate that I have stretch marks on my stomach, and I'd like to not get anymore.
42. I want to be an example for my family and friends.
43. I want to help inspire others that they can achieve their goals, so it'd be a good idea to accomplish some of mine.
44. My mom told me about an Alaskan cruise where you run a 5K at every port. I would like to do that someday.
45. I'm sick of getting sick all the time. I'm tired of being tired all the time.
46. I know that your health can affect everything else in your life.
47. I want to be able to run with my husband and not feel like I am slowing him down.
48. I want to be able to bike to work and other places, rather than drive whenever possible.
49. I don't want to be the "party pooper" when my husband says we should bike or walk somewhere rather than drive.
50. I want to be my best me, and I can't be that without having the energy, health and positive image of myself.
51. I'm in the process of changing my life and this is a part of my life that needs some changes :)

Now if you have a goal I challenge you to write 50 reasons why you want to accomplish it as well. :) Whether it's weight loss or something else like stopping an addiction or being more kind to others, I challenge you to write down your reasons for making it your goal :)

A Special thanks to all those who have helped inspire me to continue on my goals and dreams. Thanks!

cooking with what I have: Ham, veggies and rice

I tried something new, easy, and quick yesterday. It turned out pretty great, so I am sharing.

Ham, veggies, and rice
I took some precooked ham and diced it into 1/4 in pieces. then started cooking it in a frying pan. I decided I needed some veggies so I took a bag of mixed veggies from the fridge (and since I am only cooking for two) I added part of that bag of veggies. I added about 1/4-1/2 a cup of water and let it cook stirring occasionally.
While that was cooking I had rice cooking in a big pot on the stove, using my "quick tip" from the post before I cooked enough rice to make a couple meals from it. saving me time today, so I can write this :)

I let the veggies and ham cook til they were hot and then put them over rice. salt, pepper and other seasonings are optional. I added a bit of salt and pepper to mine, my husband didn't. so it's up to you and your tastes :)
You could also add soy sauce or make it more of a stir fry. I'm just cooking with what I have, so you do the same. You'd be surprised at the delicious things you can come up with.

Til next time, do something that makes you truly happy today :)

Steamed Veggies and Rice

I was told recently I should have a blog where I post my recipes. So I decided I should post some more of them.

Steamed Veggies and Rice

So with this recipe you can use pretty much any kind of veggie. I usually use asparagus, green beans, and bell peppers. Sometimes I add red cabbage, snap peas, bean sprouts, red and yellow bell peppers, and other veggies that just seam like they would steam well.

I put those veggies in a steam basket thing inside a pan with water underneath it. On top of the veggies I add about a tbs of butter cut in pieces across the top, along with a little garlic and sometimes I add tiny bit of lemon pepper, or garlic salt/pepper.

cook/steam the veggies for 30-45 mins. I know they are done when I can smell them in the house. Then I put the steamed veggies on rice.

Quick tip: When I cook rice I try to cook enough to last more than one meal and put the leftovers in the fridge. Then later that week I make something else with rice. It saves me time later in the week and doesn't take any extra time because I am already cooking rice for that night.

Chicken Noodle Soup

This is my specialty chicken veggie noodle soup.

First I filled the pot with water and turned it on
add about a teaspoon of the following spices
Cayenne Pepper
McCormick Montreal Chicken
Lemon Pepper
Salt
I let that boil while I cut the chicken and veggies
diced chicken
put it in the boiling water and begin to cut up the veggies

Add any veggies you want, I added:
3-4 stalks of celery diced
1/2  zucchini sliced
a small bunch of fresh parsley
3-4 small green onions
1/2 clove garlic diced very small
4-5 turnip greens

cook all together until the veggie are almost cooked
add
one box of noodles ( I really like the Garden Delight tricolor rotini)

cook for about 15 mins and serve.

The Beginning

So I started a new job where I work at 5 am until 1 pm. It was good the first couple weeks. Then in January I started to get sick ALL the time. I work Monday through Friday and it seemed I was sick every weekend. I would spend most of the weekend sleeping and I would feel better to go back to work Monday. Then one morning I woke up with a sore throat. I thought it would just go away, but it got worse everyday until I had to call in sick for work. After a long night's rest I woke up and felt much better, I spent the rest of my day cleaning my house to make sure there were no more sick germs in the house.
It was a little before that moment that I had decided to cut back on sugar, A LOT. I decided I would only have sugary sweet treats once a week, or less if possible. Then last week I found veggies on sale for a pretty good price at one of the places I shop, so I decided to buy a whole bunch, not exactly knowing what I would be cooking with them. I was talking with my mom and one of her employees said that for soccer they had a nutritionist come and talk to them. He had said to have 5 different colors on your plate at every meal. He didn't say count/cut calories or limit certain foods, just make sure there are 5 different colors.
So last week when I bought veggies I bought red bell peppers, orange bell peppers, yellow bell peppers, green bell peppers, Anaheim green chilies, a jalapeno pepper, green onions, turnip greens, red lettuce, romaine lettuce, limes, and other good veggies, along with whole wheat noodles and other good for you foods.
I will be posting recipes from what I have made recently and my new experimental foods. Some will be healthier than others, but my professional taste tester (aka my husband) has approved on everything I have made so far, so that's a good sign. :)
Oh and the good news about this new healthy lifestyle I am starting!
So I have been sick off and on since about mid January. I started feeling a little sick and worn out last week when I started this healthy eating. The first day after I had bought all the good food I woke up with a slight sore throat. I hadn't eaten much breakfast ad was snacking at work on some what I thought was pretty healthy cereal. I just felt worse. then I remembered I had some green bell pepper slices as well with my lunch. I pulled them out and almost immediately I started to feel better. I wasn't sick this last weekend for the first time in a while. I am actually awake at work instead of falling asleep all morning. I am getting about the same, maybe a little less sleep then before but I have so much more energy. It's amazing what this has been doing for me. I decided to post a blog to let others know that you do't have to be sick and tired all the time, you can be healthy, awake and active. I also post this because many people have this misconception that healthy food = gross icky tasting food, and it really doesn't have to be. It can be rather delicious.

Hope you enjoy the recipes that follow. I'll start posting them later this week, I need to get some sleep before work in the morning. :)
