cooking with what I have: Ham, veggies and rice

I tried something new, easy, and quick yesterday. It turned out pretty great, so I am sharing.

I took some precooked ham and diced it into 1/4 in pieces. then started cooking it in a frying pan. I decided I needed some veggies so I took a bag of mixed veggies from the fridge (and since I am only cooking for two) I added part of that bag of veggies. I added about 1/4-1/2 a cup of water and let it cook stirring occasionally.
While that was cooking I had rice cooking in a big pot on the stove, using my "quick tip" from the post before I cooked enough rice to make a couple meals from it. saving me time today, so I can write this :)

I let the veggies and ham cook til they were hot and then put them over rice. salt, pepper and other seasonings are optional. I added a bit of salt and pepper to mine, my husband didn't. so it's up to you and your tastes :)
You could also add soy sauce or make it more of a stir fry. I'm just cooking with what I have, so you do the same. You'd be surprised at the delicious things you can come up with.

I was told recently I should have a blog where I post my recipes. So I decided I should post some more of them.

Steamed Veggies and Rice

So with this recipe you can use pretty much any kind of veggie. I usually use asparagus, green beans, and bell peppers. Sometimes I add red cabbage, snap peas, bean sprouts, red and yellow bell peppers, and other veggies that just seam like they would steam well.

I put those veggies in a steam basket thing inside a pan with water underneath it. On top of the veggies I add about a tbs of butter cut in pieces across the top, along with a little garlic and sometimes I add tiny bit of lemon pepper, or garlic salt/pepper.

cook/steam the veggies for 30-45 mins. I know they are done when I can smell them in the house. Then I put the steamed veggies on rice.

Quick tip: When I cook rice I try to cook enough to last more than one meal and put the leftovers in the fridge. Then later that week I make something else with rice. It saves me time later in the week and doesn't take any extra time because I am already cooking rice for that night.
